A lovely post Hugh, the layers of botanical flavours must be wonderful in your dressing. Have you ever tried blanching the herb and drying before adding to the oil. It retains the colour and vibrancy more.

Hello Lisa! Thank you so much for your comment. In actual fact I have seen this method around. I was keen to make this recipe as simple as possible - and even without blanching first this lovage oil is wonderfully vibrant! But I'll definitely try blanching next time. I'm sure the slightly softer herb will blend easier, too. Hugo.

It's a wonderful perennial so will come back year after year - works well in a pot otherwise grows quite vigorously! My favourite herb.
